With this week's gut busting Thanksgiving holiday looming, I'm thinking about a few ways I can make the festivities a little lighter on the waistline. If you're anything like me, a major part of the challenge is just coming up with the things you want to cook. On my to do list of delicious items to whip up is an appetizer for the day, and I've zeroed in on a winning dip that will be light, healthy, and won't ruin the crowd's appetite before it's time to enjoy the main event. This recipe for this spinach feta dip is a crowd pleaser that's perfect for the holidays or any time you're entertaining.

Add two cups of water in the bottom of a small saucepan. Place spinach into the water or into a steamer basket and cover with a lid. Bring the water to a boil on high heat and cook for one minute. Drain well.

While the spinach is steaming, place the sour cream, cream cheese, and feta cheese into a food processor or blender. Blend until smooth and creamy.

Once fully combined, add spinach, all but 2 tablespoons of chives, lemon juice and pepper.

While we've been spending a whole lot of time discussing the somewhat long and drawn out process of fixing and skim coating our bathroom walls and ceiling, we haven't just been focusing our attention on the upper half of the walls. If you'll remember back to what feels like forever ago, the lower half of our bathroom walls will ultimately be the wide beadboard profile that we agonized over multiple times.

A while back we filled you in on the long and drawn out decision making process for selecting the beadboard profile, as well as the initial crushing blow of buyers remorse we experienced when the beadboard arrived. After a bit of house induced hyperventilation, a heated spousal debate, and ultimately an airing of our grievances in a blog post, you kind and level headed readers pointed us back in the general direction of sanity. We primed a section of beadboard and decided it would work in our bathroom, even if it wasn't the perfect beadboard we'd been dreaming about in our minds.

Since those initial test boards of primed panelling, we've not been a pair of slouches when it comes to bathroom projects. After all, we've been hard at work on the window, the skim coating, material selection, the closet, and best of all, the wainscoting!

The meat of the project all kicked off a few weekends back when we began installation in an unsuspecting corner of the room near the window. The beadboard is a tongue and groove pattern so the direction of the initial board is important. The tongue is on the bead side, and the groove opposite (duh), so we wanted to install in a clockwise fashion around the room with the bead to the right on each board.

Are you ready!? We've got another absolutely thrilling post surrounding the tremendously suspenseful endeavor of plaster repair and a major skim coat undertaking. Woah, watch out, I hope that fall you just took out of your chair after I told you our post topic for the day didn't hurt too terribly. I know keeping your feet on the ground and rear end firmly planted in the chair is difficult when dealing with such a tremendously gripping subject matter.

In our long and enduring plaster journey—from cracked and failing to flat and smooth—that is represented in all of our many skim coating adventures, we reach a critical juncture where the walls begin to assume a "finished" look. Don't be deceived by the false notions of a completed project. In reality we are rapidly approaching one of those fateful DIY forks in the road where our efforts can culminate in either a beautifully finished result or a steaming pile of crap, all depending on our next critical steps.

At this all too important point of skim coat plaster repair there are still bumps, ridges, imperfections, and areas to be filled, but overall we've reached a milestone where our hopes begin to outweigh our doubts and we see the crisp and smooth plaster light at the end of the mud slinging and sanding tunnel.

With skim coating, as with many old house projects, the Devil is in the details. And while many have embraced the notion of "complete but not perfect" when DIYing, taking a lax approach at this stage of the game will so dramatically impact the finished product that you could barely even label it complete. Tedious? Yes. Important? Very. Doable? Absolutely. Just follow my easy steps :wink: :smile: :tooth sparkle bell ding: :thumbs up:

After allowing the material to cure from our last step involving the thin and truly skimmed layer of joint compound, we've got a rather tall task ahead of us before we're able to continue applying finish coats. We have to muster the patience, expertise, and desire to remove any and all imperfections before going onto the next several coats of finish. Rushing this phase of the project can only result in inferior results that are magnified by your first coat of paint, yet completely avoidable with just a little effort. Trust us, we know! We had this little issue with our own inexperience in our upstairs hallway, and I stare at it. Every. Single. Day.

Like many families, in our home we participate in quite an array of different traditions. Whether we're talking about annual events attended with friends and family, family recipes that bring back memories, or traditions surrounding the holidays, it's important to us to set aside some time and attention to make these things special and memorable. In the case of birthday celebrations, the tradition I most enjoy is that delicious opportunity to create a special request birthday cake for the person whose special day we happen to be celebrating. Well, a week ago Alex celebrated his birthday, and his special request cake had me trying out a new creation I'd like to share with you today.

If there are two things you need to know about Alex they are:

When it came time to request his birthday creation, he knew just what he was in the mood for. Peanut butter and jelly cupcakes!

While I have a pretty extensive repertoire of cupcake endeavors, ranging from holiday-inspired red velvet with peppermint frosting to Irish Car Bomb cupcakes, I've never tackled a PB&J-like cupcake. But I'm not one to shy away from culinary challenges. Heck, I even created a Star Wars butter cookie topped cake one year for my nerdy darling husband, so why couldn't I pull this one off?

I quickly accepted the challenge, and started thinking about what would preserve some of the qualities of Alex's favorite sandwich, and how I could modify them as a birthday dessert. There would be no boxed mix that could fulfill this birthday wish, no tubs of icing that could make this dream a reality. Instead I'd need to get creative when it came to assembling this year's annual right of passage masterpiece.
